Lion’s Mane Jerky

Ingredients

  • 2 large Lion’s Mane mushrooms, sliced into 1/4-inch strips
  • 1/4 cup soy sauce or tamari
  • 1 tbsp maple syrup or honey
  • 1 tbsp apple cider vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • Optional: 1/4 tsp cayenne pepper for heat

Instructions

1. Preheat oven to 180°F (82°C). 2. Toss the mushroom strips in the marinade and let them sit for 30 minutes. 3. Spread them evenly on a parchment-lined baking sheet. 4. Bake for 2-3 hours, flipping halfway, until chewy and slightly crispy.
