Pulled Pork Lion’s Mane

Ingredients

  • 2 large Lion’s Mane mushrooms
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup BBQ sauce
  • Salt and pepper to taste

Instructions

1. Preheat oven to 350°F (175°C). 2. Tear the Lion’s Mane mushrooms into strips resembling pulled pork. 3. Mix olive oil, paprika, garlic powder, onion powder, salt, and pepper. 4. Toss mushrooms in the mixture and bake for 25 minutes, flipping halfway. 5. Toss with BBQ sauce and serve in sandwiches or tacos.
